Sunday Brisket

    I put a 5 lb. brisket in the smoker at 4 am. and will pull it out at 5 pm. 13 hrs. of Peach wood smoke will make it a little sweet with a nice smoke line in the meat. I always buy a brisket with a more fat than most people use. You need a little more fat when you do a long smoke so it doesn't become shoe leather.
