Chili

    So as I mentioned in Curt's post yesterday I had some stew meat and onions in the smoker for some chili. Well smoked them for two hours with hickory and apple wood. When done smoking, diced up the onions and finished cooking them off w some bacon. Threw the stew meat and remainder of the chili fixins in the pot and let simmer for a good 4-5 hrs and then back in the smoker for another two hours with some more hickory chips. It was good enough to win our chili cookoff here at the office this year. Only 9 entries this year but all were good, just some better than others.
