Call from a Cajun

I got a call from a guy I used to work with. He is from swamp east Louisiana. I had trouble understanding him at work. Now, after 5 years back in the swamp, I can't understand him at all. I told him to email me. Is cajun a defined language? I can't understand the email either. I think I've been invited on an alligator hunt when I get well. Either that or he plans to shoot me if I ever show at his house. To be honest, he heard I was ill and invited me to fish in the delta. He has a guide service now and guides both fresh and salt water.
