I got my smoker all set and ready to go tomorrow morning. We had a freind drop off a wild turkey and I've got my last ducks thawed from the freezer. All rubbed up and in the fridge tonight. Figured I would fill up the smoker so I have 2 slabs of ribs, a pork butt and a bunch of crappie. I'm going to use a blend of apple and cherry wood. Twelve hrs. to smoke the turkey and I'll remove things as they are done. Going to be a good feed for our families this Thanksgiving.

Just got to remember to keep filling the water pans in my smoker. I forgot one year and to say the bird was a little dry was an understatement.
