Snapper

A friend? brought me a large snapping turtle to make some soup. I haven't made turtle soup for a couple of decades. Now I remember why I don't make turtle soup. THEY STINK when you clean them. Smells terrible. Kind of a combination of dog farts and cat barf. Even the bones stink. I buried the remains where the moles are working. Maybe the smell will drive off the moles.
The soup tastes great. Cooking takes away most of the smell. I put some Marsala wine in my soup and it blends well with the turtle. I better enjoy it as I won't make it again. The smell lingers and I'm glad I cooked it outside.
