Trying my first....

    Brisket. Found one at a decent price, actually marked down for some reason, was no where near expiration date.

    Lots of cracked balck pepper and kosher salt and a bit of garlic powder. Gonna mix some hickory and mesquite chips for the smoke and let it run over nite.

    Figure approx 90 mins per pound, at 10lbs running 225, should be pretty close to being done by the time I get up.

    Have some parchment paper to wrap it in although its not the peach paper everyone uses just bc Aaron Franklin does, but will do the job.
